Cambas Ouzo is a traditional Greek spirit belonging to the anise. It is distinguished by its characteristic dry taste and rich, fine aroma, the result of carefully selected fennel seeds.
Ouzo ancestor was a spirit called tsipouro which is said to have been created in the 14th by a group of monks from Mount Athos. It was distilled from grape pomace and later was flavored with anise. It eventually became known as Ouzo. Cambas focuses on low-middle category wines covering all the traditional range of the Greek winemaking. At the same time Cambas winery continue to make modern and affordable wines with some international varietals.

Modern ouzo distillation largely took off in the
beginning of the 19th century following Greek independence, with production
centered on the island of Lesbos, which claims to be the originator of the drink
and remains a major producer. Ouzo in the bottle is clear, but when served properly, it turns milky white. This is because anethole, the essential oil of anise, is insoluble in water. The changing nature of ouzo must have seemed like magic to those who enjoyed it in centuries past.
