An exceptional quality, acknowledged by winning 285 medals of honor. « COEUR DE LION » Calvados ages in oak casks. The most volatile compounds, which give the young liquor its burning taste, disappear with time. The Calvados extracts various substances from the wood, including tannins which give it color and body. On contact with oxygen, the wood compounds dissolved in the spirit undergo a chemical transformation. This produces new aromas. The store-rooms of the « COEUR DE LION » estate contain a large number of small casks which allow more exchanges to take place between the spirit and the wood. Calvados with a pear in the bottle is a traditional favorite of Norman farmers, with some decanters upwards of 100 years old. This tradition was dying out when Christian Drouin gave it new life; by substituting an apple instead of a pear - a very natural partnership. He uses Calvados from the Pays d'Auge and a Boskop apple. The result is an acceleration of ageing, with the drawback of greater losses through evaporation (the « Angels' share »). Many of the casks are former sherry and port casks. It was observed that these re-used casks yielded fewer bitter tannins and helped to give a finer color, more body and greater aromatic richness. Price:

Apple trees flower abundantly; thousands of flowers give birth to
thousands of fruits, but only 5% of the fruit embryos become apples. The others
just fall from the tree. If one waits for the aborted fruits to fall before
placing the carafes over the young apples there is a risk that the neck will be
too narrow. To measure the remaining difficulty, one simply has to compare the
length of the neck of the flask with that of the apple stem. We nevertheless
made the attempt, and were the first to offer an "Imprisoned Apple" in
Calvados. Despite a failure rate that is high, we can offer a limited number of
"Imprisoned Apples" for sale.
For many people, the imprisoned apple remains a mystery : how on earth could an
apple get into a carafe full of Calvados ? Its packaging, illustrated by four
watercolours by André Vial, reveals the key to the puzzle.

Drouin calvados
The story of Drouin calvados began around 1960. There was nothing to indicate that Christian DROUIN the elder, an industrialist from Rouen, was destined to make a career in spirits. Nothing, that is, apart his taste for good food and good wines. When he bought a farm in Gonneville he decided to use the cider-apple orchards to produce calvados. His aims were simple : produce a top-quality spirit, the best.
“My father transmitted me the calvados virus”, says the younger Christian DROUIN, who has today given the family business a world-wide reputation. The brand is now sold as far as the USA and Japan.
