The reason South is so popular is the purity of the water that falls on their fiords and surrounding highlands. By introducing this water to GE free wheat they create a grain neutral spirit, distilling twice, 'washing in spring water' then distilling again.
The mythological origins of Maori society are laid out in three major myth cycles, beginning with the creation myth of Ranginui, the sky father, and Papatuanuku, the earth mother. The second sequence of myths deals with the adventures of the demi-god Maui, who fished up the land and brought many benefits into the world for humankind. The third series of myths deals with the life of Tawhaki, the model of an aristocratic and heroic figure. The botanicals of juniper berries, lemon, orange, coriander seeds, angelica leaves, orris and gentian root are blended in and then softly shaded with local berries, two of which are native: manuka berries and kawa kawa leaves, for a fragrance 'similar to walking through the bush after it's rained'.
These same native botanicals, kawakawa and manuka, also form a large part of "Rongoa Maori", the traditional medicines of the Maori people of Aotearoa. New Zealand was one of the last areas on Earth to be settled by humans. No credible evidence exists of human settlement in New Zealand prior to the Polynesian voyagers; on the other hand, compelling evidence from archaeology, linguistics, and physical anthropology indicates that the first settlers came from East Polynesia and became the Māori.
