This cheese named for the mountains of the Auvergne region of France is
often referred to as the 'French cheddar', though recipes for Cantal and
Cheddar is very different, and so are the resulting textures.
Summer Milk Comte
Every cheese from this region before being sold is judged by a
professional jury guaranteeing its quality. Its chewy pate acquires a
fruity taste when made with summer milk, and a nutty taste when made
from the milk of winter.
This pure sheep's milk cheese produced in France's Basque region in the
Pyrenees Mountains, is aged for a minimum of 70 days, during which it
develops a basket-weave pattern similar to Spain's famous Manchego
cheese but with milder and delicate favor.
Delicately scented and unexpectedly delicious, this buttery
three-to-four-month matured cheddar has tiny pieces of elderflower
running right through it.
