Chartreuse was one of the earliest herbal liqueurs. It was developed by French
Carthusian monks from a 1605 recipe that includes some 130 plants--the exact
kinds and amounts of which, as with so many other liqueurs, are still closely
guarded secrets.
Chartreuse is a unique and extraordinary product rich with history and
fascinating lore. This herbal liqueur is produced by monks of the Carthusian
order whose magnificent monastery is situated in the French Alps. The original
green Chartreuse is strong (110 proof) and herbal with a minty, peppery taste
and aroma. The yellow version, created in 1838, is sweeter and less potent (80
to 86 proof). Both are aged several years in oak vats, and small quantities are
held an additional 12 years and designated Chartreuse V.E.P.
Chartreuse V.E.P. (Vieillissement Exceptionnellement Prolongé) is made using the
same secret formula as the traditional liqueur, with the addition of extra long
ageing in oak casks until mellowed to an exceptional flavor. Each bottle is
carefully closed with a wax-sealed cork, and the back label is wax stamped with
the Chartreuse seal, before shipping in a wooden box marked with a branding
iron.

First produced in 1510 at the Bénédictine Abbey
of Fécamp in France, the formula for Bénédictine is so closely guarded it is
said that only three people know it at any one time. We do know that it contains
27 herbs and plants, from Ceylon tea to juniper berries, macerated or distilled
in five separate batches, aged in oak, then combined for further aging. Sugar
syrup and honey are added for sweetness, and caramel and saffron for color. The
finished deep-amber product is softer and less peppery than Chartreuse. The
D.O.M. designation on every label stands for the Latin Dio
Optimo Maximo, "To God, Most Good, Most Great."
