Whiskeys of Ireland
From its humble beginnings as Moorish alembic and Gaelic uisce beatha to its role in defeating the Spanish Armada, the history of Irish whiskeys winds its way from the dawn of time to its present-day popularity.
Kilbeggan
Irish Whiskey
Kilbeggan in the heart of Ireland is the home of the world famous John Locke distillery established in 1757. The tradition of distilling in Kilbeggan (Little Church in Gaelic) began with monks of the twelfth century monastery around which the village grew. Kilbeggan is Gaelic for "little church". What is now an idyllic village in the heart of Ireland was for many years an active religious and learning centre built around a monastery.
After its dissolution, the monastery again fell into ruin and, together with its lands, was granted to the Lambart family. Legend has it that monks of the 12th century began distilling Uisce Beatha (water of life) or whiskey using the barley from the surrounding fields and the waters of the Brosna river and heating the stills with turf from the local peat boglands.
Drawing on centuries of tradition and craft, Kilbeggan Irish Whiskey is distilled from the pure clear water and barley of Ireland, gently matured for long years in oak casks and skillfully blended to create a whiskey of unique smoothness and character.
Kilbeggan Irish Whiskey
"The cornerstone of Cooley Distillery - Kilbeggan is a robust blend of malts and grains offering sweet maltiness in the taste and flavour. This reflects the combination of well aged grain and carefully selected malt." Noel Sweeney, Cooley Master Blender. Kilbeggan Irish Whiskey first appeared as a John Locke's brand over 100 years ago and was sold successfully until Locke's distillery ceased production in the 1950's. Locke's distillery is the oldest continuously licensed whiskey distillery in the world dating back to 1757.

For centuries Irish whiskey was pot-distilled and sold in casks. It differs from Scotch single malts in three important ways: (1) it was made from both malted and unmalted barley; (2) no peat was used to dry the malt; (3) it was triple distilled, one batch at a time in copper pots. Long-aged, this spirit is an astonishing whiskey with unsurpassed smoothness and a very complex, slightly sweet finish.
The whiskey produced in Kilbeggan was famous throughout Ireland by the 19th Century. The building of a canal to the town led to the development of exports to lands as far away as Australia and Argentina.
Drawing on centuries of tradition and craft, Kilbeggan Irish Whiskey is distilled from the pure clear water and barley of Ireland, gently matured for long years in oak casks resting in ancient warehouses and skillfully blended to create a whiskey of unique smoothness, balance and character.
