The process starts with the cutting of the Jima of the blue Agave after ripening has taken place for over ten years.
The head of the Agave weights at least 100 pounds, and once inside the distillery it will be chopped in pieces and place within the autoclave for a 12 hour period.
Once inside this machine it gets crumbled, squeezed and fermented for a period of eight days. The objective is to covert all the Agave´s sugar into alcohol, hence finalizing the distillation process.
Puerto Vallarta Tequila
100% Blue Agave from
the Los Altos Region of the Mexican state of Jalisco...where cooler temperatures
and red clay soil allow agave to fully develop its natural qualities (10 year
growth period). This tequila is carefully crafted, aged in small oak barrels
until maturation...when the master blender decides that its smoothness and
natural color have reached perfection.
