Mezcal 5 year old Anejo
Brine, herbs de Provence, salt, smoke, oily, almost like duck fat cooked over a
smoky wood fire- saltpeter/niter, alkali, slick mouth feel, almost paradoxical
sweet/bitter and definite viscosity. About the same color as a bourbon (but not
a scotch) of the same age.

Scorpion Mezcal 7 year old Anejo
Smoke, aloe and iodine. Much more understated than any of the others a marked
contrast to the 5 year old. A eminently civilized, if tame expression of a
mezcal. On swirling, it leaves a very light coating on the glass which belies
its viscosity. Sitting in the glass, it looks like a small puddle of sap or
nectar.
