The combination of the heftier, aged rum and bitters is a perfect compliment to the champagne.
A white rum would lose its identity combined with champagne, so
you need to use an añejo rum, and add bitters to it.
-2 to 3 lime wedges, depending on the size of the lime
-6 fresh mint leaves, plus a sprig of mint for garnish
-2 teaspoons granulated sugar
-1-1/2 ounces añejo rum
1. In a mixing glass, muddle together the lime wedges, mint leaves, and sugar as described above.
2. Fill the glass 2/3 full of ice cubes, add the rum, and stir for 20 to 30 seconds.
3. Strain the mixture into a chilled martini glass, add a splash of chilled champagne, and garnish with the mint sprig.
Optional: For a festive effect, garnish with a split vanilla bean rolled in sugar.
