Mezcal

The Spaniards were the first to distill cooked Agave, around the 16th Century, although Mezcal was the first spirit distilled. Mezcal is made from the agave plant. The agave is also used to make tequila but in a different process and the Mezcal is made exclusively to Oaxaca. The Aztecs had cultivated a certain species of agave plant for juice which they would ferment into what they called pulque. Mezcal is almost exclusively served as a shooter, with or without a lick of salt and bite of lime.

What about the Worm.
It is said the worm gives strength to anyone brave enough to eat it. At least it's what makes mezcal unique. The worms lives in the agave plant and are hand-harvested during the rainy summer season. They are stored in mezcal, drained and sorted, and placed in bottles near the end of the process.

Classification

Young Mezcal obtained directly and originally with the sugar extracted from the agaves.
Resposado is aged at least 2 months in white oakwood
Anejo is aged for at least one year in white oakwood
